Ingredients:
- 1 butternut squash, peeled and chopped into cubes
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, combine the chopped butternut squash, olive oil, maple syrup, cinnamon, salt, and pepper. Toss until the squash is evenly coated.
- Spread the squash out in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 30-40 minutes, or until the squash is tender and caramelized, stirring halfway through.
- Remove from the oven and let cool slightly before serving.
