Cauliflower Stew with Sage Recipe
Ingredients:
- 1 head of cauliflower, chopped into florets
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 stalks of celery, chopped
- 1 can of diced tomatoes
- 4 cups of vegetable broth
- 1 tbsp of olive oil
- 1 tbsp of fresh sage, chopped
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add onions, garlic, carrots, and celery. Cook until onions are translucent.
- Add cauliflower florets and diced tomatoes. Cook for 5 minutes.
- Pour in vegetable broth and bring to a simmer. Cook for 15-20 minutes or until cauliflower is tender.
- Stir in fresh sage and season with salt and pepper.
- Serve hot and enjoy!
