Cauliflower Stew with Sage Recipe

Ingredients:

  • 1 head of cauliflower, chopped into florets
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks of celery, chopped
  • 1 can of diced tomatoes
  • 4 cups of vegetable broth
  • 1 tbsp of olive oil
  • 1 tbsp of fresh sage, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, garlic, carrots, and celery. Cook until onions are translucent.
  3. Add cauliflower florets and diced tomatoes. Cook for 5 minutes.
  4. Pour in vegetable broth and bring to a simmer. Cook for 15-20 minutes or until cauliflower is tender.
  5. Stir in fresh sage and season with salt and pepper.
  6. Serve hot and enjoy!
