Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup chopped fresh parsley
- 1/2 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
Instructions:
- Rinse the quinoa under cold water to remove any bitterness.
- In a saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is cooked and the water is absorbed.
- In a small bowl, whisk together olive oil, lemon juice, mustard, salt, and pepper to make the dressing.
- Fluff cooked quinoa with a fork and transfer to a large bowl.
- Add parsley, cherry tomatoes, and feta cheese to the quinoa.
- Pour the dressing over the salad and toss until well combined.
- Refrigerate for at least 30 minutes to allow the flavors to meld before serving.
