Quinoa Salad with Feta Recipe

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup chopped fresh parsley
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is cooked and the water is absorbed.
  3. In a small bowl, whisk together olive oil, lemon juice, mustard, salt, and pepper to make the dressing.
  4. Fluff cooked quinoa with a fork and transfer to a large bowl.
  5. Add parsley, cherry tomatoes, and feta cheese to the quinoa.
  6. Pour the dressing over the salad and toss until well combined.
  7. Refrigerate for at least 30 minutes to allow the flavors to meld before serving.
