Ingredients:
- 4 large bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 1 can diced tomatoes
- 1 cup shredded cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp paprika
Instructions:
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, cook the ground beef and diced onion until browned.
- Add cooked rice, diced tomatoes, salt, pepper, garlic powder, and paprika to the skillet with the beef mixture and stir to combine.
- Stuff each bell pepper with the beef and rice mixture.
- Top each stuffed bell pepper with shredded cheese.
- Place the stuffed bell peppers in a baking dish and cover with foil.
- Bake at 375°F for 30 minutes, then remove the foil and bake for an additional 10 minutes until cheese is melted and bubbly.
- Remove from oven and let cool slightly before serving.
