Mediterranean Hummus Bowl Recipe
Ingredients:
- 1 cup cooked quinoa
- 1 cup mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup Kalamata olives
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup hummus
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- In a bowl, mix cooked quinoa with olive oil and lemon juice. Season with salt and pepper.
- Arrange mixed greens in a bowl and top with the quinoa mixture.
- Place cherry tomatoes, cucumber, Kalamata olives, and red onion on top of the quinoa.
- Dollop hummus in the center of the bowl and sprinkle feta cheese over the top.
- Drizzle with additional olive oil and lemon juice if desired.
