Mediterranean Hummus Bowl Recipe

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup Kalamata olives
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup hummus
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix cooked quinoa with olive oil and lemon juice. Season with salt and pepper.
  2. Arrange mixed greens in a bowl and top with the quinoa mixture.
  3. Place cherry tomatoes, cucumber, Kalamata olives, and red onion on top of the quinoa.
  4. Dollop hummus in the center of the bowl and sprinkle feta cheese over the top.
  5. Drizzle with additional olive oil and lemon juice if desired.
