Ingredients:

  • 1 cup mochiko (sweet rice flour)
  • 1 cup sugar
  • 1 cup water
  • Cornstarch (for dusting)

Instructions:

  1. Mix Ingredients: In a microwave-safe bowl, mix together the mochiko, sugar, and water until well combined.
  2. Microwave: Cover the bowl with plastic wrap and microwave on high for 5 minutes. Remove and stir well.
  3. Microwave Again: Recover and microwave for an additional 3 minutes. Remove and stir.
  4. Shape: Dust a cutting board with cornstarch and transfer the mochi mixture onto it. Flatten and shape the mochi into a square or rectangle using a knife or cookie cutter.
  5. Cut: Cut the mochi into bite-sized pieces and dust with more cornstarch to prevent sticking.
  6. Serve: Enjoy your homemade mochi as is or fill with sweetened red bean paste, ice cream, or fruit. Store any leftover mochi in an airtight container.
