Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 1 teaspoon cumin powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Cook the Quinoa: Rinse the quinoa under cold water. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed. Fluff with a fork and set aside.
  2. Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add chopped onion and diced red bell pepper. Sauté until vegetables are soft, about 5 minutes.
  3. Add the Quinoa: Mix in the cooked quinoa with the sautéed vegetables. Stir well to combine.
  4. Season with Cumin: Sprinkle cumin powder over the quinoa and vegetable mixture. Season with salt and pepper to taste. Stir to evenly distribute the spices.
  5. Serve: Transfer the quinoa hash to a serving dish. Garnish with fresh chopped cilantro. Enjoy!
