Zucchini Wrap with Oregano Recipe

Ingredients:

  • 3 medium zucchinis
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 large whole wheat tortillas
  • 1/2 cup hummus
  • 1/2 cup diced tomatoes
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the zucchinis and slice them lengthwise into thin strips.
  3. Place the zucchini strips on a baking sheet and drizzle with olive oil.
  4. Sprinkle with dried oregano, salt, and pepper.
  5. Bake in the preheated oven for 15-20 minutes, or until the zucchinis are tender.
  6. Warm the tortillas in a skillet or microwave.
  7. Spread each tortilla with a layer of hummus.
  8. Top with the roasted zucchini, diced tomatoes, and crumbled feta cheese.
  9. Roll up the tortillas tightly to form wraps.
  10. Serve immediately and enjoy!
