Ingredients:
- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1/4 cup milk
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped pecans (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- Boil sweet potatoes in a large pot of water until tender, about 15 minutes. Drain and mash.
- In a mixing bowl, combine mashed sweet potatoes, brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until well blended.
- Transfer mixture to a greased baking dish.
- Sprinkle chopped pecans on top (if using).
- Bake in preheated oven for 30 minutes, or until heated through and topping is golden brown.
- Remove from oven and let cool slightly before serving.
