Ingredients:
- 3 large sweet potatoes, peeled and thinly sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons minced ginger
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
- Preheat your oven to 375°F.
- In a medium saucepan, heat the heavy cream and minced ginger over medium heat until just simmering.
- Layer the sliced sweet potatoes in a greased baking dish, seasoning each layer with salt and pepper.
- Pour the ginger-infused cream over the sweet potatoes, making sure they are all coated evenly.
- Sprinkle the grated Parmesan cheese evenly over the top of the sweet potatoes.
- Cover the baking dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden brown.
- Garnish with chopped fresh parsley before serving.
