Ingredients:

  • 3 large sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons minced ginger
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F.
  2. In a medium saucepan, heat the heavy cream and minced ginger over medium heat until just simmering.
  3. Layer the sliced sweet potatoes in a greased baking dish, seasoning each layer with salt and pepper.
  4. Pour the ginger-infused cream over the sweet potatoes, making sure they are all coated evenly.
  5. Sprinkle the grated Parmesan cheese evenly over the top of the sweet potatoes.
  6. Cover the baking dish with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden brown.
  8. Garnish with chopped fresh parsley before serving.
