Ingredients:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until browned on all sides, about 5 minutes.
- Add bell peppers, onion, and garlic to the skillet and cook for an additional 5 minutes, or until vegetables are tender.
- Sprinkle oregano, salt, and pepper over the chicken and vegetables, and toss to combine.
- Continue to cook for another 2-3 minutes, or until chicken is cooked through.
