Ingredients:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides, about 5 minutes.
  3. Add bell peppers, onion, and garlic to the skillet and cook for an additional 5 minutes, or until vegetables are tender.
  4. Sprinkle oregano, salt, and pepper over the chicken and vegetables, and toss to combine.
  5. Continue to cook for another 2-3 minutes, or until chicken is cooked through.
