Ingredients:

  • 1 cup quinoa
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • Salt and pepper to taste

Instructions:

Step 1: Rinse Quinoa

Rinse the quinoa under cold water to remove bitterness.

Step 2: Sauté Vegetables

In a large pot, sauté the onion and garlic until fragrant. Add carrots and celery and cook until tender.

Step 3: Add Remaining Ingredients

Stir in the diced tomatoes, vegetable broth, cumin, cinnamon, salt, and pepper. Bring to a boil.

Step 4: Simmer

Add the quinoa to the pot and reduce heat to simmer. Cover and cook for about 15 minutes, or until quinoa is tender.
