Ingredients:

  • 1 1/2 lbs of beef stew meat, cubed
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can of diced tomatoes
  • 1 cup of beef broth
  • 1 tbsp of fresh thyme leaves
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F.
  2. In a large oven-safe pot, brown the beef stew meat over medium heat.
  3. Add the onion and garlic, and sauté until fragrant.
  4. Add the carrots and celery, and cook until slightly softened.
  5. Stir in the diced tomatoes, beef broth, thyme leaves, salt, and pepper.
  6. Cover the pot and place it in the oven to bake for 2 hours, or until the beef is tender.
  7. Remove from the oven and let it rest for 10 minutes before serving.
  8. Serve the beef casserole hot, garnished with extra thyme leaves if desired.
