Ingredients:
- 1 1/2 lbs of beef stew meat, cubed
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 can of diced tomatoes
- 1 cup of beef broth
- 1 tbsp of fresh thyme leaves
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350°F.
- In a large oven-safe pot, brown the beef stew meat over medium heat.
- Add the onion and garlic, and sauté until fragrant.
- Add the carrots and celery, and cook until slightly softened.
- Stir in the diced tomatoes, beef broth, thyme leaves, salt, and pepper.
- Cover the pot and place it in the oven to bake for 2 hours, or until the beef is tender.
- Remove from the oven and let it rest for 10 minutes before serving.
- Serve the beef casserole hot, garnished with extra thyme leaves if desired.
