Ingredients:
- 1 cup of green lentils
- 2 cups of vegetable broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of dried sage
- Salt and pepper to taste
- 1/2 cup of breadcrumbs
- 1/4 cup of grated Parmesan cheese
Instructions:
- Preheat the oven to 375°F (190°C).
- Rinse the lentils under cold water and drain.
- In a large saucepan, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until softened.
- Add the lentils, vegetable broth, sage, salt, and pepper, and bring to a boil.
- Reduce heat, cover, and simmer for about 25-30 minutes until lentils are tender.
- Transfer the lentil mixture to a baking dish.
- In a small bowl, mix the breadcrumbs and Parmesan cheese, then sprinkle over the lentil mixture.
- Bake in the preheated oven for 20-25 minutes, until the top is golden brown.
- Let it cool slightly before serving.
