Mushroom Roast with Lemon Recipe

Ingredients:

  • 1 lb mushroom caps, cleaned and sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, juiced and zested
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. In a large bowl, toss the mushroom caps with olive oil, garlic, thyme, lemon juice, lemon zest, salt, and pepper until well coated.
  3. Transfer the mushroom mixture to a baking dish and spread them out in an even layer.
  4. Roast in the preheated oven for 20-25 minutes, or until the mushrooms are golden brown and tender.
  5. Remove from the oven and serve hot, garnished with additional fresh thyme and lemon slices if desired.
