Ingredients:
- 1 lb mushroom caps, cleaned and sliced
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 lemon, juiced and zested
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F.
- In a large bowl, toss the mushroom caps with olive oil, garlic, thyme, lemon juice, lemon zest, salt, and pepper until well coated.
- Transfer the mushroom mixture to a baking dish and spread them out in an even layer.
- Roast in the preheated oven for 20-25 minutes, or until the mushrooms are golden brown and tender.
- Remove from the oven and serve hot, garnished with additional fresh thyme and lemon slices if desired.
