Ingredients:

  • 2 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 stalks celery, sliced
  • 1 lb potatoes, cubed
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • Salt and pepper to taste
  • 1 tsp thyme
  • 1 tsp rosemary

Instructions:

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add beef stew meat and brown on all sides, about 5 minutes.
  3. Add onion and garlic, sauté until fragrant, about 2 minutes.
  4. Add carrots, celery, and potatoes, cook for another 5 minutes.
  5. Pour in diced tomatoes and beef broth, season with salt, pepper, thyme, and rosemary.
  6. Bring to a boil, then reduce heat and simmer for 1-1.5 hours, until meat is tender.
  7. Adjust seasoning if needed and serve hot.
