Ingredients:
- 2 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 large carrots, sliced
- 2 stalks celery, sliced
- 1 lb potatoes, cubed
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- Salt and pepper to taste
- 1 tsp thyme
- 1 tsp rosemary
Instructions:
- Heat olive oil in a large pot over medium-high heat.
- Add beef stew meat and brown on all sides, about 5 minutes.
- Add onion and garlic, sauté until fragrant, about 2 minutes.
- Add carrots, celery, and potatoes, cook for another 5 minutes.
- Pour in diced tomatoes and beef broth, season with salt, pepper, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 1-1.5 hours, until meat is tender.
- Adjust seasoning if needed and serve hot.
