Recipe for Vegetarian Chili

Ingredients:

  • 1 can of black beans
  • 1 can of kidney beans
  • 1 can of diced tomatoes
  • 1 green bell pepper, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 2 tablespoons of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and bell pepper and sauté until the vegetables are soft.
  3. Add the chili powder, cumin, salt, and pepper and stir to combine.
  4. Stir in the black beans, kidney beans, and diced tomatoes with their juices.
  5. Bring the chili to a simmer and let it cook for about 20 minutes, stirring occasionally.
  6. Taste and adjust the seasonings as needed.
  7. Serve the vegetarian chili hot with your favorite toppings, such as shredded cheese, sour cream, or avocado.
