Ingredients:
- 1 cup wild rice
- 2 cups water
- 1 onion, chopped
- 1 red bell pepper, diced
- 1 clove garlic, minced
- 1 tsp paprika
- 1/2 cup grated cheddar cheese
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F.
- Rinse wild rice under cold water and drain.
- In a medium saucepan, bring 2 cups of water to a boil. Add wild rice, cover, and simmer for 45 minutes or until rice is tender.
- In a skillet, sauté onion, red bell pepper, and garlic until softened.
- Add cooked wild rice to the skillet and stir in paprika, cheddar cheese, and parsley. Season with salt and pepper.
- Transfer mixture to a baking dish and bake for 20 minutes until cheese is melted and bubbly.
- Serve hot and enjoy!
