Wild Rice Casserole with Paprika

Ingredients:

  • 1 cup wild rice
  • 2 cups water
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 1 clove garlic, minced
  • 1 tsp paprika
  • 1/2 cup grated cheddar cheese
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F.
  2. Rinse wild rice under cold water and drain.
  3. In a medium saucepan, bring 2 cups of water to a boil. Add wild rice, cover, and simmer for 45 minutes or until rice is tender.
  4. In a skillet, sauté onion, red bell pepper, and garlic until softened.
  5. Add cooked wild rice to the skillet and stir in paprika, cheddar cheese, and parsley. Season with salt and pepper.
  6. Transfer mixture to a baking dish and bake for 20 minutes until cheese is melted and bubbly.
  7. Serve hot and enjoy!
