Ingredients:

  • 1 lb. white fish (such as tilapia or cod)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas

Instructions:

  1. Preheat the oven to 400°F.
  2. Season the fish with cumin, chili powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook the fish for 3-4 minutes on each side until fully cooked.
  5. Warm the corn tortillas in the oven for 1-2 minutes.

Mango Salsa:

  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and diced
  • Juice of 1 lime
  • Salt to taste

Instructions:

  1. Combine all the ingredients in a bowl and mix well.
  2. Let the salsa sit for at least 15 minutes to allow the flavors to meld.

Assembly:

  1. Place a spoonful of mango salsa on each tortilla.
  2. Top with a piece of cooked fish.
