Mediterranean Hummus Bowl Recipe

Ingredients:

  • 1 cup of cooked quinoa
  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of olive oil
  • 2 tablespoons of tahini
  • 2 cloves of garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Assorted toppings: cherry tomatoes, cucumber slices, olives, feta cheese, parsley

Instructions:

  1. In a food processor, combine the chickpeas, olive oil, tahini, garlic, lemon juice, cumin, salt, and pepper. Blend until smooth.
  2. Divide the cooked quinoa into bowls.
  3. Top the quinoa with the hummus mixture.
  4. Add your favorite toppings such as cherry tomatoes, cucumber slices, olives, feta cheese, and parsley.
  5. Drizzle with extra olive oil and a squeeze of lemon juice before serving.
