Mediterranean Hummus Bowl Recipe
Ingredients:
- 1 cup of cooked quinoa
- 1 can of chickpeas, drained and rinsed
- 1/4 cup of olive oil
- 2 tablespoons of tahini
- 2 cloves of garlic, minced
- 1 lemon, juiced
- 1 teaspoon of cumin
- Salt and pepper to taste
- Assorted toppings: cherry tomatoes, cucumber slices, olives, feta cheese, parsley
Instructions:
- In a food processor, combine the chickpeas, olive oil, tahini, garlic, lemon juice, cumin, salt, and pepper. Blend until smooth.
- Divide the cooked quinoa into bowls.
- Top the quinoa with the hummus mixture.
- Add your favorite toppings such as cherry tomatoes, cucumber slices, olives, feta cheese, and parsley.
- Drizzle with extra olive oil and a squeeze of lemon juice before serving.
