Galette des Rois de Cyril Lignac

Ingredients:

  • 2 sheets of puff pastry
  • 100g almond powder
  • 100g sugar
  • 2 eggs
  • 100g butter (softened)
  • A small ceramic charm or trinket (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the almond powder, sugar, eggs, and softened butter until you get a smooth cream.
  3. Place one sheet of puff pastry on a baking sheet lined with parchment paper.
  4. Spread the almond cream mixture onto the puff pastry, leaving a border of about 2cm around the edges.
  5. If desired, place the ceramic charm or trinket somewhere in the almond cream.
  6. Place the second sheet of puff pastry on top of the almond cream mixture and press the edges to seal.
  7. With a sharp knife, lightly score the top of the galette in a decorative pattern.
  8. Bake in the preheated oven for 30-35 minutes, or until the puff pastry is golden brown and puffed up.
  9. Let the galette cool slightly before serving.
