Ingredients:
- 1 cup mochiko (sweet rice flour)
- 1 cup sugar
- 1 cup water
- Cornstarch (for dusting)
- Desired fillings (e.g. red bean paste, fruit, ice cream)
Instructions:
- In a microwave-safe bowl, mix mochiko, sugar, and water together until smooth.
- Cover the bowl with plastic wrap and microwave on high for 5 minutes.
- Remove from microwave and stir with a wet spoon until smooth.
- Cover again and microwave for another 3 minutes.
- Let it cool for a few minutes.
- Dust a work surface with cornstarch and transfer the mochi onto it.
- Knead the mochi until smooth and slightly stretchy.
- Divide the mochi into small pieces and flatten them with your hands.
- Add your desired filling to the center of each flatten mochi piece.
- Seal the edges and shape into balls.
- Cover with cornstarch to prevent sticking.
- Serve and enjoy your homemade mochi!
