Ingredients:

  • 1 cup mochiko (sweet rice flour)
  • 1 cup sugar
  • 1 cup water
  • Cornstarch (for dusting)
  • Desired fillings (e.g. red bean paste, fruit, ice cream)

Instructions:

  1. In a microwave-safe bowl, mix mochiko, sugar, and water together until smooth.
  2. Cover the bowl with plastic wrap and microwave on high for 5 minutes.
  3. Remove from microwave and stir with a wet spoon until smooth.
  4. Cover again and microwave for another 3 minutes.
  5. Let it cool for a few minutes.
  6. Dust a work surface with cornstarch and transfer the mochi onto it.
  7. Knead the mochi until smooth and slightly stretchy.
  8. Divide the mochi into small pieces and flatten them with your hands.
  9. Add your desired filling to the center of each flatten mochi piece.
  10. Seal the edges and shape into balls.
  11. Cover with cornstarch to prevent sticking.
  12. Serve and enjoy your homemade mochi!
