Ingredients:
- 2 lbs beef chuck, cut into 2-inch cubes
- 1 tbsp olive oil
- 6 slices of bacon, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 cups red wine
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tbsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups pearl onions
- 1 lb mushrooms, sliced
- 2 tbsp butter
Instructions:
- Preheat the oven to 325°F.
- Season the beef cubes with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium heat.
- Brown the bacon in the Dutch oven, then remove and set aside.
- Add the beef cubes to the Dutch oven and brown on all sides, then remove and set aside.
- Add the chopped onion and garlic to the Dutch oven and cook until softened.
- Return the beef and bacon to the Dutch oven.
- Pour in the red wine, beef broth, tomato paste, thyme, and bay leaf.
- Cover and bake in the preheated oven for 2 hours.
- Meanwhile, melt butter in a skillet over medium heat.
- Add pearl onions and mushrooms, cooking until golden brown.
- After 2 hours, remove the Dutch oven from the oven and stir in the cooked pearl onions and mushrooms.
- Return to the oven for an additional 30 minutes.
- Season with salt and pepper to taste before serving.
