Bœuf Bourguignon Recipe

Ingredients:

  • 2 lbs beef chuck, cut into 2-inch cubes
  • 1 tbsp olive oil
  • 6 slices of bacon, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups red wine
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups pearl onions
  • 1 lb mushrooms, sliced
  • 2 tbsp butter

Instructions:

  1. Preheat the oven to 325°F.
  2. Season the beef cubes with salt and pepper.
  3. Heat the olive oil in a large Dutch oven over medium heat.
  4. Brown the bacon in the Dutch oven, then remove and set aside.
  5. Add the beef cubes to the Dutch oven and brown on all sides, then remove and set aside.
  6. Add the chopped onion and garlic to the Dutch oven and cook until softened.
  7. Return the beef and bacon to the Dutch oven.
  8. Pour in the red wine, beef broth, tomato paste, thyme, and bay leaf.
  9. Cover and bake in the preheated oven for 2 hours.
  10. Meanwhile, melt butter in a skillet over medium heat.
  11. Add pearl onions and mushrooms, cooking until golden brown.
  12. After 2 hours, remove the Dutch oven from the oven and stir in the cooked pearl onions and mushrooms.
  13. Return to the oven for an additional 30 minutes.
  14. Season with salt and pepper to taste before serving.
