Ratatouille Recipe

Ingredients:

  • 1 eggplant
  • 2 zucchinis
  • 1 bell pepper
  • 1 onion
  • 2 tomatoes
  • 3 cloves of garlic
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat the oven to 375°F.
  2. Cut the eggplant, zucchinis, bell pepper, and tomatoes into small cubes.
  3. Chop the onion and garlic.
  4. In a large baking dish, combine all the vegetables and garlic.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Cover with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, until vegetables are tender.
  8. Serve hot as a side dish or over pasta or rice.
