Ingredients:
- 1 eggplant
- 2 zucchinis
- 1 bell pepper
- 1 onion
- 2 tomatoes
- 3 cloves of garlic
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat the oven to 375°F.
- Cut the eggplant, zucchinis, bell pepper, and tomatoes into small cubes.
- Chop the onion and garlic.
- In a large baking dish, combine all the vegetables and garlic.
- Drizzle with olive oil and season with salt and pepper.
- Cover with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, until vegetables are tender.
- Serve hot as a side dish or over pasta or rice.
