Ingredients:
- 4 large onions, thinly sliced
- 4 tablespoons of butter
- 2 tablespoons of all-purpose flour
- 6 cups of beef broth
- 1 cup of dry white wine
- 1 French baguette, sliced
- 1 1/2 cups of grated Gruyère cheese
- Salt and pepper to taste
Instructions:
- Caramelize the onions: In a large pot, melt the butter over medium heat. Add the sliced onions and cook until caramelized, stirring occasionally (about 30 minutes).
- Make the broth: Sprinkle the flour over the caramelized onions and cook for an additional 2 minutes. Slowly pour in the beef broth and white wine, stirring to combine. Bring the soup to a simmer and let it cook for 20 minutes.
- Toast the baguette and cheese: Preheat the oven to 350°F. Place the baguette slices on a baking sheet and toast in the oven until crisp. Sprinkle the grated Gruyère cheese over the toasted baguette slices and return to the oven until the cheese is melted and bubbly.
