Ingredients

  • 6 large egg yolks
  • 3/4 cup sugar
  • 1 cup mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 24-30 ladyfingers
  • Cocoa powder, for dusting

Instructions

  1. In a heatproof bowl, whisk together egg yolks and sugar over a double boiler until thick and creamy. Remove from heat and let cool.
  2. Whisk in mascarpone cheese until smooth and set aside.
  3. In a separate bowl, whip heavy cream and vanilla extract until stiff peaks form.
  4. Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. Dip each ladyfinger into the brewed coffee and line the bottom of a dish with them.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  8. Refrigerate for at least 4 hours or overnight to set.
  9. Before serving, dust the top with cocoa powder for garnish.
