Ingredients
- 6 large egg yolks
- 3/4 cup sugar
- 1 cup mascarpone cheese
- 1 1/2 cups heavy cream
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled
- 24-30 ladyfingers
- Cocoa powder, for dusting
Instructions
- In a heatproof bowl, whisk together egg yolks and sugar over a double boiler until thick and creamy. Remove from heat and let cool.
- Whisk in mascarpone cheese until smooth and set aside.
- In a separate bowl, whip heavy cream and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Dip each ladyfinger into the brewed coffee and line the bottom of a dish with them.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Refrigerate for at least 4 hours or overnight to set.
- Before serving, dust the top with cocoa powder for garnish.
