Ingredients:
- 2 lbs chicken breasts, cut into cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp curry powder
- 1 can coconut milk
- 1 cup chicken broth
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions:
- Heat vegetable oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sauté until fragrant.
- Add the chicken cubes and cook until browned on all sides.
- Sprinkle curry powder over the chicken and stir to coat evenly.
- Pour in the coconut milk and chicken broth, stirring to combine.
- Simmer the curry for 20-25 minutes, or until chicken is cooked through.
- Season with salt and pepper to taste.
