Ingredients:

  • 2 cups fresh basil
  • 1/2 cup pine nuts
  • 3 cloves garlic
  • 1/2 cup grated parmesan cheese
  • 1/2 cup olive oil
  • Salt and pepper, to taste
  • 12 oz pasta of your choice

Instructions:

  1. Start by boiling water and cooking the pasta according to the package instructions. Drain and set aside.
  2. In a food processor, combine the basil, pine nuts, and garlic. Pulse until finely chopped.
  3. Add the parmesan cheese and pulse again.
  4. While pulsing, slowly drizzle in the olive oil until the pesto reaches your desired consistency. You may need more or less oil depending on your preference.
  5. Season the pesto with salt and pepper to taste.
  6. In a large bowl, toss the cooked pasta with the pesto until well coated.
  7. Serve the pesto pasta warm or at room temperature, garnished with additional parmesan cheese if desired.
