Gluten-Free Pancakes Recipe

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
  5. Pour 1/4 cup of the pancake batter onto the skillet and cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.
  6. Repeat with the remaining batter.
  7. Serve the pancakes warm with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
