Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1/2 cup soy sauce
- 1/4 cup mirin
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 2 cups cooked white rice
- Sesame seeds & sliced green onions for garnish
Instructions:
- First, prepare the marinade by combining soy sauce, mirin, brown sugar, garlic, and ginger in a bowl.
- Cut chicken into bite-sized pieces and place in a resealable plastic bag.
- Pour marinade over chicken, seal the bag, and refrigerate for at least 30 minutes (or overnight for best flavor).
- Heat a large skillet over medium-high heat and add chicken pieces, along with marinade.
- Cook chicken until browned and cooked through, about 10 minutes.
- While chicken is cooking, reheat rice in a separate pan.
- To assemble the bowl, divide rice among serving bowls, top with teriyaki chicken and drizzle with extra sauce.
- Garnish with sesame seeds and sliced green onions.
