Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 cups cooked white rice
  • Sesame seeds & sliced green onions for garnish

Instructions:

  1. First, prepare the marinade by combining soy sauce, mirin, brown sugar, garlic, and ginger in a bowl.
  2. Cut chicken into bite-sized pieces and place in a resealable plastic bag.
  3. Pour marinade over chicken, seal the bag, and refrigerate for at least 30 minutes (or overnight for best flavor).
  4. Heat a large skillet over medium-high heat and add chicken pieces, along with marinade.
  5. Cook chicken until browned and cooked through, about 10 minutes.
  6. While chicken is cooking, reheat rice in a separate pan.
  7. To assemble the bowl, divide rice among serving bowls, top with teriyaki chicken and drizzle with extra sauce.
  8. Garnish with sesame seeds and sliced green onions.
