Vegetarian Lasagna Recipe

Ingredients

  • 9 lasagna noodles
  • 2 cups of marinara sauce
  • 2 cups of ricotta cheese
  • 1 cup of shredded mozzarella cheese
  • 1 cup of chopped spinach
  • 1 cup of sliced mushrooms
  • 1/2 cup of grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. In a skillet, heat the olive oil and sauté the garlic, mushrooms, and spinach until softened. Season with salt and pepper.
  4. In a mixing bowl, combine the ricotta cheese and Parmesan cheese.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Place three lasagna noodles on top of the marinara sauce.
  7. Spread half of the ricotta cheese mixture over the noodles, then add half of the vegetable mixture on top.
  8. Repeat the layers with marinara sauce, noodles, ricotta cheese, and vegetables.
  9. Top with the remaining marinara sauce and sprinkle the mozzarella cheese on top.
  10. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  11. Let the lasagna cool for a few minutes before slicing and serving.
