Vegetarian Lasagna Recipe
Ingredients
- 9 lasagna noodles
- 2 cups of marinara sauce
- 2 cups of ricotta cheese
- 1 cup of shredded mozzarella cheese
- 1 cup of chopped spinach
- 1 cup of sliced mushrooms
- 1/2 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Cook the lasagna noodles according to package instructions, then drain and set aside.
- In a skillet, heat the olive oil and sauté the garlic, mushrooms, and spinach until softened. Season with salt and pepper.
- In a mixing bowl, combine the ricotta cheese and Parmesan cheese.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place three lasagna noodles on top of the marinara sauce.
- Spread half of the ricotta cheese mixture over the noodles, then add half of the vegetable mixture on top.
- Repeat the layers with marinara sauce, noodles, ricotta cheese, and vegetables.
- Top with the remaining marinara sauce and sprinkle the mozzarella cheese on top.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
- Let the lasagna cool for a few minutes before slicing and serving.
