Sweet Potato Tart with Coriander Recipe
Ingredients:
- 1 pre-made pie crust
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup sugar
- 2 eggs
- 1/2 cup heavy cream
- 1 tablespoon ground coriander
- 1 teaspoon salt
Instructions:
1. Preheat your oven to 350°F.
2. Roll out the pie crust and press into a 9-inch tart pan. Set aside.
3. In a medium saucepan, boil the sweet potatoes until tender. Drain and mash them in a mixing bowl.
4. Stir in the sugar, eggs, cream, coriander, and salt until well combined.
5. Pour the sweet potato mixture into the prepared tart shell.
6. Bake for 30-35 minutes, or until the filling is set and the crust is golden brown.
