Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, diced
- 1 cup grated cheddar cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Rinse the quinoa under cold water and drain.
- In a large skillet, heat olive oil over medium heat. Add onion and bell peppers, sauté until softened.
- Add garlic and paprika, cook for another minute.
- Add quinoa and vegetable broth, bring to a boil. Reduce heat, cover and simmer for 15 minutes.
- Remove from heat and stir in half of the cheddar cheese, season with salt and pepper.
- Transfer the quinoa mixture to a baking dish, top with the remaining cheddar cheese.
- Bake in the preheated oven for 20 minutes or until cheese is melted and bubbly.
- Serve hot and enjoy!
