Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 1 cup grated cheddar cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Rinse the quinoa under cold water and drain.
  3. In a large skillet, heat olive oil over medium heat. Add onion and bell peppers, sauté until softened.
  4. Add garlic and paprika, cook for another minute.
  5. Add quinoa and vegetable broth, bring to a boil. Reduce heat, cover and simmer for 15 minutes.
  6. Remove from heat and stir in half of the cheddar cheese, season with salt and pepper.
  7. Transfer the quinoa mixture to a baking dish, top with the remaining cheddar cheese.
  8. Bake in the preheated oven for 20 minutes or until cheese is melted and bubbly.
  9. Serve hot and enjoy!
