Ratatouille Recipe

Ingredients

  • 1 eggplant
  • 2 zucchinis
  • 1 yellow squash
  • 1 red bell pepper
  • 1 onion
  • 2 cloves of garlic
  • 1 can of crushed tomatoes
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried basil
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Vegetables

Preheat the oven to 375°F. Dice the eggplant, zucchinis, yellow squash, red bell pepper, and onion into small cubes. Mince the garlic cloves.

Step 2: Saute the Vegetables

Heat olive oil in a large skillet over medium heat. Add the diced vegetables and minced garlic. Cook until the vegetables are softened, about 5-7 minutes.

Step 3: Add the Crushed Tomatoes and Seasonings

Stir in the can of crushed tomatoes, dried thyme, dried basil, salt, and pepper. Simmer for another 5 minutes.

Step 4: Bake the Ratatouille

Transfer the vegetable mixture to a baking dish. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes.

Step 5: Serve and Enjoy

Remove the ratatouille from the oven and let it cool slightly before serving. Enjoy as a side dish or main course!
