Ingredients:
- 1 lb white fish fillets
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 ripe mango, diced
- 1/2 red onion, chopped
- 1/2 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions:
- Preheat the grill or a grill pan over medium heat.
- In a small bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Brush the fish fillets with the spice mixture.
- Grill the fish for 3-4 minutes per side, or until cooked through. Remove from heat and let rest.
- Heat the corn tortillas on the grill for about 30 seconds per side.
- In a medium bowl, mix together mango, red onion, red bell pepper, cilantro, lime juice, salt, and pepper.
- Assemble the tacos by placing a piece of grilled fish on each tortilla and topping with mango salsa.
- Serve hot and enjoy!
