Ingredients:
- 1 large eggplant
- 2 medium zucchinis
- 2 bell peppers
- 1 onion
- 3 cloves of garlic
- 1 can of diced tomatoes
- 1/4 cup of olive oil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F.
- Cut the eggplant, zucchinis, bell peppers, and onion into bite-sized pieces.
- Mince the garlic cloves.
- In a large baking dish, combine the diced vegetables and garlic.
- Drizzle the olive oil over the vegetables and sprinkle with oregano, salt, and pepper.
- Toss everything together until well coated.
- Cover the baking dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender.
- Serve hot as a side dish or over pasta or rice.
