Ratatouille Recipe

Ingredients:

  • 1 large eggplant
  • 2 medium zucchinis
  • 2 bell peppers
  • 1 onion
  • 3 cloves of garlic
  • 1 can of diced tomatoes
  • 1/4 cup of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. Cut the eggplant, zucchinis, bell peppers, and onion into bite-sized pieces.
  3. Mince the garlic cloves.
  4. In a large baking dish, combine the diced vegetables and garlic.
  5. Drizzle the olive oil over the vegetables and sprinkle with oregano, salt, and pepper.
  6. Toss everything together until well coated.
  7. Cover the baking dish with foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender.
  9. Serve hot as a side dish or over pasta or rice.
