Soupe à l’oignon Recipe

Ingredients:
- 4 large onions, thinly sliced
- 4 cups beef broth
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 cup dry white wine
- 1 teaspoon sugar
- Salt and pepper to taste
- French baguette slices
- Gruyère or Swiss cheese, grated
Instructions:
Step 1: Caramelize the Onions
- In a large pot, melt the butter over medium heat.
- Add the sliced onions and cook until they are caramelized, about 30 minutes.
Step 2: Make the Soup
- Sprinkle the flour over the caramelized onions and cook for 2-3 minutes.
- Add the wine and beef broth, then bring to a simmer.
- Stir in the sugar, salt, and pepper.
- Simmer for an additional 20-30 minutes.
Step 3: Prepare the Toppings
- Preheat the broiler.
- Toast the baguette slices until golden brown.
- Place the slices on top of the soup in oven-safe bowls.
- Sprinkle the grated cheese over the baguette slices.
- Broil until the cheese is melted and bubbly.
