Soupe à l’oignon Recipe

Ingredients:

  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup dry white wine
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • French baguette slices
  • Gruyère or Swiss cheese, grated

Instructions:

Step 1: Caramelize the Onions

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced onions and cook until they are caramelized, about 30 minutes.

Step 2: Make the Soup

  1. Sprinkle the flour over the caramelized onions and cook for 2-3 minutes.
  2. Add the wine and beef broth, then bring to a simmer.
  3. Stir in the sugar, salt, and pepper.
  4. Simmer for an additional 20-30 minutes.

Step 3: Prepare the Toppings

  1. Preheat the broiler.
  2. Toast the baguette slices until golden brown.
  3. Place the slices on top of the soup in oven-safe bowls.
  4. Sprinkle the grated cheese over the baguette slices.
  5. Broil until the cheese is melted and bubbly.
