Stuffed Bell Peppers Recipe

Ingredients:

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1 cup cooked quinoa
  • 1 can diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded cheese

Instructions:

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large skillet, cook the ground turkey until no longer pink. Add the diced onion and garlic, and cook until softened.
  3. Add the cooked quinoa, diced tomatoes, Italian seasoning, salt, and pepper to the skillet. Mix well.
  4. Stuff each bell pepper with the turkey and quinoa mixture. Place them in a baking dish.
  5. Sprinkle shredded cheese on top of each stuffed bell pepper.
  6. Cover the baking dish with foil and bake at 375°F for 25-30 minutes or until the peppers are tender.
  7. Remove from the oven and let cool for a few minutes before serving.
