Stuffed Bell Peppers Recipe
Ingredients:
- 4 large bell peppers
- 1 lb ground turkey
- 1 cup cooked quinoa
- 1 can diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 cup shredded cheese
Instructions:
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground turkey until no longer pink. Add the diced onion and garlic, and cook until softened.
- Add the cooked quinoa, diced tomatoes, Italian seasoning, salt, and pepper to the skillet. Mix well.
- Stuff each bell pepper with the turkey and quinoa mixture. Place them in a baking dish.
- Sprinkle shredded cheese on top of each stuffed bell pepper.
- Cover the baking dish with foil and bake at 375°F for 25-30 minutes or until the peppers are tender.
- Remove from the oven and let cool for a few minutes before serving.
