Title: Lobster Bisque Recipe
Ingredients:
- 2 cooked lobsters
- 4 tablespoons unsalted butter
- 1 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1/4 cup tomato paste
- 1/4 cup all-purpose flour
- 4 cups fish or seafood stock
- 1 cup dry white wine
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions:
- Prep the lobster: Remove the meat from the lobster shells and chop into bite-sized pieces. Set aside.
- Sauté the vegetables: In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
- Add the tomato paste: Stir in the tomato paste and cook for another 2 minutes.
- Add the flour: Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute.
- Add the stock and wine: Slowly pour in the fish or seafood stock and white wine, stirring constantly. Bring the mixture to a simmer.
- Add the lobster: Add the chopped lobster meat to the pot. Simmer for 10 minutes.
- Blend the soup: Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.
- Add the cream: Stir in the heavy cream and season with salt and pepper to taste.
- Serve: Ladle the lobster bisque into bowls and garnish with chopped parsley. Serve hot and enjoy!
