Ingredients:

  • 2 cooked lobsters
  • 4 tablespoons unsalted butter
  • 1 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery

  • 4 cups fish or seafood stock

Instructions:

  1. Prep the lobster: Remove the meat from the lobster shells and chop into bite-sized pieces. Set aside.
  2. Sauté the vegetables: In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
  3. Add the tomato paste: Stir in the tomato paste and cook for another 2 minutes.
  4. Add the flour: Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute.
  5. Add the stock and wine: Slowly pour in the fish or seafood stock and white wine, stirring constantly. Bring the mixture to a simmer.
