Ingredients:
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, sliced
- 1 zucchini, sliced
- 1 cup mushrooms, sliced
- 1/4 cup soy sauce
- Salt and pepper to taste
Instructions:
- Heat vegetable oil in a large skillet over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add bell pepper, broccoli, carrot, zucchini, and mushrooms. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
- Pour soy sauce over the vegetables and stir to combine. Season with salt and pepper.
- Cook for an additional 2-3 minutes, then remove from heat.
- Serve hot as a side dish or over rice for a complete meal.
