Ingredients:

  • 4 lb beef roast
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tbsp pepper
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 cup beef broth

Instructions:

  1. Preheat oven to 350°F.
  2. Rub olive oil, salt, pepper, and garlic all over the beef roast.
  3. Place sliced onions on the bottom of a roasting pan.
  4. Put the beef roast on top of the onions.
  5. Pour beef broth into the pan.
  6. Cover the roasting pan with foil and roast in the preheated oven for 2-3 hours, or until beef is cooked to your desired level of doneness.
  7. Remove from oven and let it rest for 10 minutes before slicing and serving.
