Ingredients:
- 4 lb beef roast
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tbsp pepper
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 cup beef broth
Instructions:
- Preheat oven to 350°F.
- Rub olive oil, salt, pepper, and garlic all over the beef roast.
- Place sliced onions on the bottom of a roasting pan.
- Put the beef roast on top of the onions.
- Pour beef broth into the pan.
- Cover the roasting pan with foil and roast in the preheated oven for 2-3 hours, or until beef is cooked to your desired level of doneness.
- Remove from oven and let it rest for 10 minutes before slicing and serving.
