Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper
  • 2 cups cooked brown rice
  • 1 cup mixed vegetables (such as broccoli, carrots, and bell peppers)

Instructions:

  1. Preheat the oven to 375°F.
  2. In a small bowl, mix together the olive oil, thyme, salt, and pepper.
  3. Place the chicken breasts on a baking sheet and brush them with the thyme mixture.
  4. Bake the chicken for 25-30 minutes, or until cooked through.
  5. While the chicken is baking, cook the brown rice according to package instructions.
  6. In a separate pan, sauté the mixed vegetables until tender.
  7. Once the chicken is done, slice it into strips.
  8. Assemble the chicken bowl by placing a scoop of brown rice in a bowl, topping with the cooked vegetables, and arranging the sliced chicken on top.
