Brussels Sprouts Soup with Cumin Recipe

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until fragrant.
  3. Add Brussels sprouts and cumin, cook for 5 minutes.
  4. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Blend soup until smooth using an immersion blender.
  6. Season with salt and pepper to taste before serving.
