Ingredients:
- 1 acorn squash
- 2 tbsp olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F.
- Cut the acorn squash in half and scoop out the seeds.
- Brush the inside of the squash halves with olive oil and season with salt and pepper.
- Place the squash halves on a baking sheet and roast in the oven for 40-45 minutes, or until tender.
- Remove the squash from the oven and let it cool slightly.
- Fill each squash half with chopped basil and drizzle with a little more olive oil.
- Serve hot and enjoy!
