Acorn Squash Bowl with Basil Recipe

Ingredients:

  • 1 acorn squash
  • 2 tbsp olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. Cut the acorn squash in half and scoop out the seeds.
  3. Brush the inside of the squash halves with olive oil and season with salt and pepper.
  4. Place the squash halves on a baking sheet and roast in the oven for 40-45 minutes, or until tender.
  5. Remove the squash from the oven and let it cool slightly.
  6. Fill each squash half with chopped basil and drizzle with a little more olive oil.
  7. Serve hot and enjoy!
