Ingredients:
- 1 cup dried green lentils
- 2 cups water
- 1/4 cup chopped fresh basil
- 1/4 cup red onion, diced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions:
- Rinse the lentils under cold water and drain well.
- In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender but still hold their shape.
- Once cooked, drain any excess water from the lentils and allow them to cool to room temperature.
- In a large mixing bowl, combine the lentils, basil, red onion, cherry tomatoes, and feta cheese.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the lentil mixture and gently toss to combine.
- Adjust seasoning to taste and serve chilled or at room temperature.
