Lentil Salad with Basil Recipe

Ingredients:

  • 1 cup dried green lentils
  • 2 cups water
  • 1/4 cup chopped fresh basil
  • 1/4 cup red onion, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Rinse the lentils under cold water and drain well.
  2. In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender but still hold their shape.
  3. Once cooked, drain any excess water from the lentils and allow them to cool to room temperature.
  4. In a large mixing bowl, combine the lentils, basil, red onion, cherry tomatoes, and feta cheese.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  6. Pour the dressing over the lentil mixture and gently toss to combine.
  7. Adjust seasoning to taste and serve chilled or at room temperature.
