Ingredients:
- 2 medium parsnips, peeled and thinly sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
- 4 large whole grain wraps
- 1 cup baby spinach leaves
- 1/2 cup crumbled feta cheese
Instructions:
- Preheat oven to 400°F.
- In a large bowl, toss parsnip slices with olive oil, garlic, thyme, salt, and pepper.
- Spread parsnip mixture onto a baking sheet in a single layer and roast for 20-25 minutes, or until parsnips are tender and slightly browned.
- Heat wraps in a dry skillet over medium heat for 1-2 minutes per side.
- Divide spinach leaves, roasted parsnips, and feta cheese among the wraps.
- Wrap tightly and cut in half before serving.
