Ingredients:

  • 2 medium parsnips, peeled and thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 4 large whole grain wraps
  • 1 cup baby spinach leaves
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Preheat oven to 400°F.
  2. In a large bowl, toss parsnip slices with olive oil, garlic, thyme, salt, and pepper.
  3. Spread parsnip mixture onto a baking sheet in a single layer and roast for 20-25 minutes, or until parsnips are tender and slightly browned.
  4. Heat wraps in a dry skillet over medium heat for 1-2 minutes per side.
  5. Divide spinach leaves, roasted parsnips, and feta cheese among the wraps.
  6. Wrap tightly and cut in half before serving.
