Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Instructions:

  1. Cook the quinoa: Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Fluff with a fork.
  2. Saute the vegetables: In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, and cook until softened. Add zucchini, mushrooms, and garlic, and cook until vegetables are tender.
  3. Add the quinoa: Stir in the cooked quinoa with the vegetables. Sprinkle cinnamon over the mixture and season with salt and pepper. Cook for another 2-3 minutes until everything is heated through.
  4. Serve: Remove from heat and serve the quinoa stir-fry hot. Enjoy!
