Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 teaspoon cinnamon
- Salt and pepper to taste
Instructions:
- Cook the quinoa: Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Fluff with a fork.
- Saute the vegetables: In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, and cook until softened. Add zucchini, mushrooms, and garlic, and cook until vegetables are tender.
- Add the quinoa: Stir in the cooked quinoa with the vegetables. Sprinkle cinnamon over the mixture and season with salt and pepper. Cook for another 2-3 minutes until everything is heated through.
- Serve: Remove from heat and serve the quinoa stir-fry hot. Enjoy!
