- 2 cups diced cooked turkey
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 bell pepper, diced
- 4 cups chicken broth
- 1 tsp black pepper
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 2 tbsp olive oil
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
- Add bell pepper and cook for another 2 minutes.
- Stir in diced turkey and season with salt, pepper, garlic powder, and thyme.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Adjust seasoning to taste and serve hot.
