Ingredients:

  • 1 acorn squash, halved and seeds removed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Brush the inside of the acorn squash with olive oil and season with salt and pepper.
  3. Sprinkle the minced garlic and chopped basil on top of the squash halves.
  4. Place the acorn squash halves on a baking sheet, cut side up.
  5. Bake in the oven for 45-60 minutes, or until the squash is tender and caramelized.
  6. Remove from the oven and let cool slightly before serving.
