Ingredients:

  • 1 head of cauliflower, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh coriander for garnish

Instructions:

Step 1: Prepare the Cauliflower

  1. Chop the cauliflower into small florets.
  2. Place the cauliflower in a food processor and pulse until it resembles rice.

Step 2: Cook the Cauliflower Hash

  1. Heat olive oil in a skillet over medium heat.
  2. Add the cauliflower rice, cumin, coriander, salt, and pepper to the skillet.
  3. Cook for 8-10 minutes, stirring occasionally, until the cauliflower is tender and slightly browned.

Step 3: Garnish and Serve

  1. Remove the skillet from heat and garnish with fresh coriander.
  2. Serve hot as a side dish or as a filling for tacos or burritos.
